The correct #1 and #2 large kraft boat tray is not simply the tray with the highest stated capacity. For Canadian fish-and-chip shops, quick-service chains, stadium vendors, caterers and delivery kitchens, the right format is the smallest tray that presents the intended portion attractively while preventing crushed fries, sauce overflow, grease strike-through and excessive movement during transport.

In practical terms, a #1 large kraft boat tray is often suitable for standard loaded fries, single-serve fish-and-chip meals, chicken tenders with fries, poutine-style sides and snackable sharing portions. A #2 large kraft boat tray is generally better for larger fish fillets, double-protein combinations, heavily topped fries, party-style snacks and portions weighing closer to 500 g. However, tray naming is not standardized across every supplier. Buyers should confirm inside length, inside width, top opening, base dimensions, depth, paperboard grade, coating and usable fill line before ordering.

For foodservice operators in Toronto, Vancouver, Montréal, Calgary, Halifax and other high-volume Canadian markets, the approval process should include real menu portions rather than dry-volume assumptions. Fill the tray with freshly cooked food, add sauces and toppings, hold it for the normal service period, close it with the intended lid or place it in the delivery bag, then assess appearance, rigidity and leakage. A good specification is repeatable: it defines the tray dimensions, material, finish, load range, food contact requirements, print version, packing method and acceptance criteria for every repeat order.

Fries vary by cut, moisture level and packing style; battered fish varies by fillet thickness; toppings can add substantial volume even when weight changes little. The usable volume of a tray is always lower than its nominal water capacity because food must remain below the rim and retain a stable presentation.
Map Fish-and-Chip Combos, Loaded Fries and Sharing Snacks to #1 and #2 Large Kraft Boat Trays
Menu mapping helps buyers avoid the costly habit of using one oversized tray for every item. When a small serving is placed in an overly large tray, the food can look under-portioned, cool faster and slide during delivery. When a heavily loaded serving is forced into a smaller tray, staff may overfill it, contaminate the outside surface and create inconsistent customer experiences.
For a traditional fish-and-chip takeaway, use the #1 format as the initial benchmark when the menu contains one moderate fish fillet plus a controlled portion of fries. Select the #2 format when the fish portion is broad, fries are piled high, tartar sauce cups are included inside the tray, or the business serves a premium “large” menu. In coastal markets such as Halifax, Victoria and St. John’s, where seafood portions can be more generous, a wider #2 profile may be preferable to a deeper narrow tray because it supports the fish fillet without folding or breaking the batter.
Loaded fries require extra attention because cheese curds, gravy, pulled meat, chili, jalapeños and sauces increase both weight and surface moisture. A tray that appears sufficient for dry fries may fail when used for poutine or fully dressed fries. Sharing snacks are often lighter by weight but higher in bulk; they can need a broader opening to prevent chips, onion rings or popcorn chicken from spilling when customers carry them through a mall, arena or festival venue.
|
